The highlight of Gujarati street food, dabeli, is a beloved snack in many parts of the country. Made with a spicy potato filling, dabeli masala, peanuts, and pavs, here is an easy-to-follow recipe for beginners.
For The Potato Filling: 2 potatoes 1/4 cup peas 1/4 cup coriander leaves 1/2 teaspoon red chilli powder 1/4 teaspoon turmeric powder 1/4 teaspoon coriander powder 1/4 teaspoon garam masala 1 tablespoon vegetable oil Salt to taste
For The Dabeli Masala: 1 cup roasted peanuts 2 tablespoons tamarind 1 tablespoon chopped ginger 2 green chillies, chopped 1 teaspoon coriander seeds 1/2 teaspoon cumin seeds 1/4 teaspoon red chilli powder Salt to taste For the Assembly: Pav buns Sev Green chutney Sweet tamarind chutney Pomegranate seeds
Prepare the filling by cooking mashed potatoes with all the spices. Set aside.
For the dabeli masala, grind all the ingredients and a little water to make a coarse paste.
Take the pav buns and slice them horizontally.
Spread a layer of green chutney on the bottom half and tamarind chutney on the top half.
Add the filling, top it with sev and pomegranate seeds, and serve.
