Make Gluten-Free Quinoa Salad For Healthy Snacking

Protein-packed quinoa can be quickly added to your bowl of salad for a complete meal. Whether you want a snack or a nutritious option for lunch, quinoa salad is perfect for people trying to lose weight.

Ingredients

1 cup quinoa, rinsed 2 cups water 1 cup cucumber, diced 1/2 red onion, thinly sliced 1/2 cup cherry tomatoes, halved 1/4 cup chopped fresh mint 1/4 cup chopped fresh cilantro 1/4 cup olive oil 2 tablespoons lemon juice 1 tablespoon vinegar 1/2 teaspoon honey Salt and pepper to taste

Step 1

Mix quinoa with water and salt, and boil the mixture. Let it simmer till water is absorbed.

Step 2

Combine cooked quinoa, chopped cucumber, onion, tomatoes, mint, and cilantro.

Step 3

In another bowl, whisk olive oil, lemon juice, vinegar, honey, salt, and pepper.

Step 4

Pour the dressing over the salad and toss till everything is well mixed.

Step 5

Refrigerate and enjoy a chilled and healthy salad.
