Do you enjoy the Mumbai-style street food, bhelpuri? Why don’t you make it healthier with millets? Replacing the traditional murmura with quinoa, here’s how you can make a guilt-free snack.
1 cup quinoa 1.5 cups water ½ cup onion 1 cup of cucumber ½ cup cherry tomatoes ½ cup cooked chickpeas ¼ cup cilantro ¼ cup mint 2 tablespoons roasted peanuts 1 tablespoon tamarind chutney 1 tablespoon green chutney 1 tablespoon lemon juice ½ teaspoon chaat masala Salt to taste
Mix quinoa and water, and boil till the quinoa is fluffy. Turn off the heat.
Chop onion, cucumber, and cherry tomatoes. Mix in fluffed quinoa.
Add cooked chickpeas, cilantro, mint, and roasted peanuts.
Combine with tamarind chutney, green chutney, and lemon juice.
Sprinkle chaat masala and toss till well combined. Serve immediately.
