Millets are gaining much traction, thanks to their nutritional value and health benefits. If your comfort food is pulao, you can enjoy it without any guilt by making it gluten-free. Here’s a quick recipe to try.
1 cup mixed millets 1 onion 1 tomato 1 green chilli 1 inch ginger 2 cloves garlic 1 teaspoon cumin seeds 1 bay leaf 2 green cardamoms 1 cinnamon stick 1 teaspoon garam masala 1/2 teaspoon turmeric powder 1/4 teaspoon red chilli powder 1/4 cup chopped coriander leaves Salt to taste 2 tablespoons oil Mixed vegetables
Rinse the mixed millet and soak for half an hour. Drain and keep aside.
Heat some oil and saute cumin seeds, bay leaf, green cardamom, and cinnamon stick.
Add chopped onion, ginger and garlic. Mix in tomatoes and cook till they are soft.
Stir in turmeric powder, red chilli powder, and garam masala.
Add mixed vegetables like peas, carrots, and cauliflower. Pour some water and boil.
Add the millets and simmer for 20 minutes. Garnish with coriander leaves and serve.
