This is an easy-to-make yet flavourful dish and is made with ghee, rice, subtle spices and herbs. It makes a perfect light meal that can be paired with sambar or chutney. Here’s how you can make ghee rice within 10 minutes.

Step 1

Wash and soak the rice for at least 30 minutes. Drain the water and keep it aside.

Step 2

Take a pressure cooker, heat it and add ghee. Add spices like cloves, cardamom pods, cinnamon sticks, bay leaf and star anise. Saute for a few seconds until fragrant.

Step 3

Take another pan and dry roast the cashews, then set aside.

Step 4

Add the sliced onions, green chillies, curry leaves and minced ginger. Saute until the onions turn transluscent and golden brown.

Step 5

At this stage, add in the rice and mix it well with the ghee, spices, and salt to taste.

Step 6

Pour in the water and give it a gentle stir. Cover the pressure cooker lid and cook the rice for at least 1 whistle. Turn off the heat and allow the rice to fluff up in steam.
