As spring arrives, blackberries become worth looking forward to for their deep colour and natural sweetness. Relish them all year long by making your own jam without zero preservatives. This jam is great on toast, pancakes, or as an accompaniment to puddings.
500 g fresh blackberries, washed and drained 250 g sugar 2 tablespoons lemon juice 2 tablespoons water
Add the blackberries alongside water to a heavy-bottomed pan, then cook on medium heat until the fruit softens and releases juices.
Mash the berries lightly using a spoon to break them down while keeping some texture.
Add the sugar and lemon juice, stir well until the sugar dissolves completely.
Cook the mixture on low heat, stirring often, until it thickens and reaches a jam-like consistency.
Switch off the heat, cool slightly, and store the jam in a clean, sterilised glass jar once fully cooled.
