Anarsa, a classic Maharashtrian sweet, is crispy on the outside and soft on the inside. Prepared from rice and jaggery (gud), it’s a festive delight perfect for sharing the festivities with your loved ones.
1 cup chawal ka atta ½ cup, grated Jaggery (Gud) 2 tbsp poppy seeds 3–4 tbsp Ghee
In a bowl, mix rice flour and jaggery syrup to make a smooth, thick dough. Keep it overnight to get the best texture and flavour.
Take small pieces from the dough, roll them into balls, and flatten a little. Coat its surface with poppy seeds to get crunch and festive charm.
On low-medium flame, heat ghee and shallow fry the Anarsa until it appears to be brown and crisp from the outside, soft from inside, retaining the jaggery's sweetness.
Let it cool a bit and serve it. Perfect for enjoying with family, celebrating tradition in every bite.
