Regardless of the celebrations across India, coconut barfi fits right into the picture. It is delicious, creamy, nutty, and nutritious. If you have been looking for its recipe, your search ends here.
1.5 cups sugar 4.25 cups coconut ½ tsp cardamom powder 2 cups milk 2 tbsp cashews 2 tbsp ghee
Line a tray with parchment paper and roast cashews in a tablespoon of ghee.
In a saucepan, combine milk and coconut. Bring the mixture to a boil on a medium flame.
Reduce the heat and let the mixture thicken as the milk evaporates.
Add ghee to blend and keep cooking it until the mixture starts leaving the pan.
Add cardamom powder, cashews, and a few other dry fruits if you wish to.
Shape the blend into bite-sized ladoos and enjoy.
