You can quickly whip up this delectable dish in your kitchen's comfort using an induction-friendly pan. If you haven't tried chicken ghee roast yet, now is the time.
500g chicken, washed and chopped into small pieces 3-4 tbsp ghee 1 tsp cumin seeds 1 spring of curry leaves 1 onion, finely chopped 6-7 garlic cloves, finely chopped 1 inch of ginger, finely chopped 2 tomatoes, finely chopped ½ tsp turmeric powder 2 tsp red chilli powder 1 tsp coriander powder 1 tsp garam masala powder Salt, to taste 1 tsp lemon juice
Heat 2-3 tablespoons of ghee in an induction-friendly pan on medium at 160°C to 180°C.
Add the cumin seeds and curry leaves once the ghee melts. Add the chopped onions and saute them until golden brown.
Add the diced garlic and ginger and fry for a few minutes until they are aromatic. Sauté the diced tomatoes until they're mashed properly.
Add salt, red chilli powder, coriander powder, garam masala powder, and turmeric powder to the pan. Simmer for a short period.
Mix the masala and chicken in the pan. Ensure that the ingredients are thoroughly spread on the chicken.
Put a lid on the pan and cook the chicken for 10 to 15 minutes. Add a teaspoon of lemon juice to the pan and stir.
Lastly, stir in 3-4 tablespoons of ghee in the pan. Garnish with fresh coriander leaves and serve.
