Kheer kadam, also known as kheer kodombo or kheerkodom, is an exotic Bengali dessert consisting of roasted poppy seeds, mashed, sweetened, and flavoured khoya, and small roshogollas. This confection resembles a ball-shaped kadam or kodombo flower, and kheer is a Bengali word for khoya/mawa or dried milk.
1.5 litres of milk 2 tablespoons of lemon juice 250 grams of sugar ¼ teaspoon of saffron 260 grams of khoya ¼ teaspoon of rose water 100 grams of desiccated coconut
Boil milk. Add the lemon juice. Stir continuously until the milk starts to curdle. Remove it from the heat and transfer this to a cloth and squeeze.
Transfer this onto a board and knead it into a dough. Take some mixture from the dough and roll it into a ball. Keep it aside.
Take a heavy skillet, add sugar, water and stir continuously until the sugar is dissolved completely. Add saffron and mix it well.
Add the prepared balls to it. Cook for 15 - 20 minutes on medium heat. Remove it from the heat and allow it to cool for about 15 minutes.
Remove the balls from the sugar syrup and transfer them to a bowl. Take a pan, add khoya and mix it well.
Add sugar and mix it well. Cook for 5 - 7 minutes on medium heat.
Add rose water. Let it cook. Remove from the heat and cool it. Serve.
