Aloo posto is a Bengali-style ground poppy seeds mixture cooked with potatoes and mustard oil, and tastes best with steamed rice.
500g of potatoes, cubed 4 tbsp of poppy seeds 2 tbsp mustard oil ½ tsp cumin seeds ½ tsp kalonji 2-3 green chillies
Soak the poppy seeds in water for 10-20 minutes. Add to the blender with green chillies.
Blend it into a smooth paste and set aside. Heat mustard oil in a pan. Add cumin seeds and kalonji.
Let them crackle for a few seconds. Add the cubed potatoes and saute for 5-6 minutes until golden brown.
Add the poppy seed paste. Add a little water. Mix it well so that the potatoes are coated in it.
Cover and cook for 10 minutes or until the potatoes turn soft and the gravy thickens.
Serve aloo posto with steamed rice and dal!
