Bidding the summer season goodbye is difficult only because you know the mango season will be over too. To preserve the raw mangoes, make aam panna concentrate and enjoy the summer beverage.
1 kg raw mangoes 1.5 kg water 2 kg sugar 1 tablespoon black pepper 1 tablespoon black salt 1 tablespoon roasted cumin powder 1 tablespoon dry mint leaves 0.5 teaspoon sodium benzoate Salt to taste
Rinse the mangoes and boil them in a pressure cooker.
Once cooled, peel the skin and mash the mangoes.
Make a sugar syrup with water and sugar. Add it to the mashed mangoes.
Mix in salt, black pepper, black salt, cumin powder, mint leaves, and sodium benzoate.
Transfer to a bottle, refrigerate, and enjoy your aam panna in the monsoon as well.
