Making a handmade Christmas pudding is simple; all it takes is some steaming time to transform it into a delicious, rich and fruity treat. A joyous classic, you will know Christmas is here when you smell the beautiful aromas of this traditional pudding!
50g of blanched almonds 2 large cooking apples 200g of candied peel 1 whole nutmeg 1kg raisins 140g of plain flour 100g white bread crumbs 100g of crushed sugar 3 large eggs 2 tablespoons of brandy 250g of butter Orange zest, grated 5 tablespoons of icing sugar 2 extra stems of ginger
Chop the apples, almonds, and candied peels and grate 3 quarters of nutmeg. Add to a large mixing bowl.
Add the raisins, flour, sugar, eggs, and brandy. Add a quarter of the butter. Now, start mixing it.
Once the mixture reaches a semi-thick consistency, set it aside.
Take two large bowls. Grease it with butter. Place a baking paper in it. Slowly pour the pudding mixture into both.
Wrap the mixture with another baking paper. Tie both bowls of mixture with a string.
Place each bowl on foil paper. Wrap the foil paper around the bowls. Place it on a steamer.
Steam the pudding for 8 hours. Remove afterwards and let it cool overnight.
As it cools down, remove the baking paper, wrap it with fresh ones. Store in a cool, dry place until Christmas.
While serving, make the cream by mixing orange zest, ginger stems, brandy, butter and icing sugar. Serve during Christmas!
