Til chikki is a winter favourite prepared with roasted sesame and molten jaggery, and is loved for its deep nuttiness and warmth. Crisp and fragrant, it’s a Sankranti classic which is easy to make at home.
1 cup white sesame seeds (til) ¾ cup jaggery, grated or crushed 1 tsp ghee ½ tsp cardamom powder 1 tsp roasted peanuts (optional)
In a pan, dry-roast some sesame seeds on low heat until they puff a little and release a nutty aroma.
In a pan, heat ghee and add jaggery to it. Melt on low flame until it turns smooth, glossy, and bubbles.
Add the roasted sesame seeds and peanuts (optional) to the molten jaggery. Mix it quickly so that every seed is evenly covered before the mixture hardens.
Sprinkle the cardamom powder and mix fast, ensuring the aroma spreads evenly without letting the jaggery cool or harden too soon.
Transfer the mixture to a greased surface, place the parchment on top, and roll it thin with a greased rolling pin while it is still hot.
Cut the squares immediately using a knife, and let the chikki cool completely. Break it into crisp pieces once set and store in an airtight box.
