Gajak is a winter sweet closely associated with Makar Sankranti, especially in North India. Made with sesame seeds and jaggery, it is valued for its crisp texture and the warmth these ingredients provide during cold weather.
1 cup white sesame seeds ¾ cup jaggery, grated 1 tbsp ghee 1–2 tbsp water
Dry roast sesame seeds on low heat until aromatic and lightly crackling.
Melt jaggery with water in a heavy pan and cook until it reaches hard-crack stage.
Add ghee and roasted sesame seeds and mix quickly.
Spread the mixture thinly on a greased surface and roll flat.
Cut into pieces while warm and allow to cool completely.
