Masala khichdi is a warming, spiced version of the classic rice-and-dal dish, often prepared during winter festivals like Makar Sankranti. The use of ghee and whole spices makes it filling while still keeping it easy to digest, which is why it is commonly served as a complete meal during colder months.
½ cup rice ½ cup moong dal 1 small onion, finely chopped 1 small tomato, chopped 1 tsp ginger paste ½ tsp turmeric powder 1 tsp cumin seeds ½ tsp red chilli powder 1½ tbsp ghee Salt to taste 3½ cups water
Wash rice and dal together until the water runs clear.
Heat ghee in a pressure cooker, add cumin seeds and let them splutter.
Add onion and ginger and sauté until soft, then add tomato and spices.
Add rice, dal, salt and water and pressure cook for 3 whistles.
Rest briefly, stir gently and serve hot with curd or pickle.
