Steaming rice slow-cooked with goda masala, vegetables, and ghee fills the kitchen with a deep, familiar aroma, where every spoon carries that festive Maharashtrian touch, gently spiced and rooted in traditional home-style cooking.
1 cup rice 2 tbsp oil or ghee 1 tsp mustard seeds 1 tsp cumin seeds 8-10 curry leaves 1 chopped onion 1 diced potato ½ cup green peas ¼ cup chopped carrot 2 tbsp roasted peanuts 2 tbsp fresh grated coconut 1 tbsp goda masala ½ tsp turmeric powder 1 tsp red chilli powder Salt to taste 2 cups water 2 tbsp coriander leaves
Wash rice and soak for 15 minutes, then drain completely.
Heat oil, add mustard seeds, cumin, curry leaves and let them crackle.
Add onion and vegetables, sauté till slightly soft but not mushy.
Mix in spices, peanuts and rice, stir gently so grains stay separate.
Add water, cook covered till rice is fluffy, finish with coconut and coriander.
