Kanole is a traditional Maharashtrian sweet made with a crispy maida shell and a sweet coconut-jaggery filling. Deep-fried to golden perfection, it is rich in flavour and a festive favourite across Maharashtra.
For the Dough: 1 cup maida 1 tbsp ghee Water to knead A pinch of salt For the Filling: 1 cup fresh grated coconut 1/2 cup grated jaggery 1/2 tsp cardamom powder 1 tsp poppy seeds 1 tsp ghee For Frying: Oil or ghee
Mix maida, salt, ghee and add water slowly to knead a semi-stiff dough, then cover and let it rest for 20-30 mins.
Heat ghee, add coconut, jaggery and cook until the mixture thickens, then add cardamom, poppy seeds and let it cool.
Roll small puris from the dough, add filling in the centre, fold into a half-moon, and seal the edges using a fork.
Heat oil and fry on medium flame until golden and crisp.
Let them cool and enjoy
