Munching crispy and savoury snacks whip sipping chai is extremely satisfying. If you have already tried enough pakoras, try this South Indian maddur vada recipe for a crunchy tea-time snack.
1 cup rice flour 1/2 cup rava 1/4 cup maida 1 onion 1 green chilli A handful of coriander leaves 1 tablespoon sesame seeds 1 tablespoon roasted peanuts 1 teaspoon cumin seeds A pinch of asafoetida (hing) Salt to taste 2 tablespoons hot oil Water for kneading
Mix rice flour, rava, maida, sesame seeds, peanuts, cumin seeds, hing, and salt.
Stir in the finely chopped onion, green chilli, and coriander leaves.
Heat some oil and pour over the dry mixture. Add water and knead a dough.
Take small portions of the dough and shape into patties. Deep-fry or air-fry till crispy.
Arrange the crispy maddur vadas and serve with your favourite chutney.
