Some foods just know how to make a bad day better. Mac and cheese tops that list. Creamy, gooey and packed with flavour, it’s comfort food without the fuss. And the best part? It’s surprisingly easy to make at home.
– 3 tablespoons butter – 3 tablespoons all-purpose flour – 2 cups milk – 2 cups elbow macaroni – ½ cup mozzarella cheese – 1 ½ cups cheddar cheese – ½ teaspoon mustard powder – ¼ teaspoon black pepper – Salt, to taste – ¼ cup breadcrumbs
Boil the macaroni in salted water until just al dente. Remove water and set aside.
In a saucepan, melt the butter over medium heat.
Add the flour and whisk continuously for a minute, until it turns light golden. This is your roux.
Slowly pour in the milk, whisking constantly to avoid lumps.
Keep stirring until the mixture thickens into a smooth sauce; this takes about 5 minutes.
Lower the heat and add the grated cheddar and mozzarella, a handful at a time, stirring until fully melted.
Season with mustard powder, salt, and pepper.
Add the cooked macaroni to the sauce and mix well until every piece is coated.
If you want a baked finish, transfer it to a baking dish, top with breadcrumbs, and bake at 190°C for about 15 minutes, until golden.
Serve hot, straight from the pot or fresh out of the oven.
