Mishti doi is an essential highlight of festive spreads, beloved for its caramelised sweetness and velvety texture. Traditional recipes rely on large quantities of refined sugar reduced over hours, but this lighter version achieves the same iconic depth using a minimal amount of date palm jaggery and thick Greek yoghurt. It offers the classic earthy notes and silky mouthfeel of authentic Bengali sweet curd while keeping the overall sugar content significantly lower for mindful festive indulgence.
2 cups full-cream milk  2 tablespoons date palm jaggery (nolen gur) or dark palm sugar  1/2 cup thick Greek yoghurt or hung curd  1/4 teaspoon green cardamom powder  A pinch of saffron strands
Simmer the milk in a heavy-bottomed pan over medium heat for eight minutes until it reduces slightly in volume.
Stir in the date palm jaggery and cardamom powder until completely dissolved, then remove from heat and let it cool until warm to the touch.
Whisk the thick Greek yoghurt in a mixing bowl until completely smooth, then gradually pour in the lukewarm spiced milk while whisking constantly.
Pour the mixture into small earthen pots or ceramic bowls, cover tightly, and let it set in a warm place for six to eight hours before chilling in the refrigerator.
