The classic Waldorf salad is a brilliant combination of textures, but the traditional heavy mayonnaise dressing can often mask the brightness of the fresh ingredients. Swapping out the mayo for crisp, tangy Greek yogurt completely transforms the nutritional profile while keeping the dish incredibly creamy. This low calorie adaptation elevates the natural crunch of fresh apples and celery, balancing the earthiness of toasted walnuts with the juicy sweetness of halved grapes. It is a refreshing, fibre rich side dish or light lunch that comes together in minutes and leaves you feeling energised.

Ingredients

2 crisp red or green apples, cored and diced 2 celery stalks, thinly sliced 1/2 cup red grapes, halved 1/3 cup walnuts, roughly chopped Dressing: 1/2 cup plain Greek yogurt, 1 tsp lemon juice, a pinch of black pepper, and salt to taste

Step 1

Whisk the plain Greek yogurt, fresh lemon juice, salt, and cracked black pepper together in a small bowl until the dressing is smooth and pourable.

Step 2

Combine the diced apples, sliced celery, and halved grapes in a large mixing bowl, tossing them lightly to mix the colours.

Step 3

Pour the creamy yogurt dressing over the fruit and vegetable mixture, folding gently until every piece is lightly and evenly coated.

Step 4

Toast the chopped walnuts in a dry pan over low heat for two minutes until fragrant, then scatter them over the salad just before serving to maintain maximum crunch.
