As per USDA, the flour of these noodles is made out of glucomannan and contains about 3% fibre and 97% water, making it low in calories. Shirataki noodles could be your saviour in a diet full of bland meals!
4 cups of shirataki noodles, soaked 1 baby bok choy 1 green onion 1 tsp minced garlic ½ tbsp sesame oil 2 tbsp soy sauce 1 tsp odf dark soy sauce 1 tsp light brown sugar 1 tsp unseasoned rice vinegar Toasted sesame seeds MSG, as needed, optional
Separate the young bok choy leaves and clean them well. Cut into bite-sized pieces, separating the white and green portions.
Thinly slice the green onion, separating the white and green parts again. Set a pan on medium heat.
Drain the shirataki noodles in a mesh strainer or colander, then rinse completely with cool water.
Cook the noodles in the empty pan, stirring occasionally, until the water has evaporated. Push the noodles to one side of the pan.
Add the sesame oil, garlic, and green onion whites. Cook for approximately 1-2 minutes.
Add baby bok choy whites, soy sauce, brown sugar, and rice vinegar.
Cook, stirring often, until the majority of the liquid has evaporated, which should take around 3 minutes. Season with MSG if needed. Serve.
