Often called til papad or til patti, it may appear challenging to make, but it's actually rather simple. When making these sesame thins, all you have to do is work quickly. Many Indian kitchens make til papdi during the winter months.
1 cup of white sesame seeds or til ½ cup of crushed or grated jaggery or gur ½ teaspoon of cardamom powder A handful of chopped peanuts A handful of chopped almonds A handful of pistachios A pinch of salt
Turn on the flame. Heat a pan. Turn flame to medium. Add the sesame seeds.
Dry roast them until golden brown. Set them aside.
In the same pan, heat ghee and add the jaggery.
Cook over low heat until it melts and turns into a thick syrup.
Add a bit of salt, cardamom powder, roasted sesame seeds, and chopped dry fruits. Mix well.
Using an oiled spatula, evenly distribute the hot mixture onto a parchment paper or plate. Let it cool.
Cut into squares while still warm, or once somewhat set, split into pieces. Enjoy and let it cool completely.
