Mumbai’s cutting chai is like the warmth of the sun on a winter day. It has whole spices that add earthy notes and make people crave it, especially during monsoon and winter. Here is how you can replicate it at home.
½ tsp pepper 1-inch ginger 3 cups water 3 tsp sugar 3 pods cardamom 1 cup milk 4 cloves ½-inch cinnamon 3 tsp tea powder
Pound whole spices using a mortar and pestle.
Heat water in a saucepan over medium heat.
Add spice powder and bring it to a boil.
Add tea powder and boil for another 2 minutes.
Add sugar and stir well. Pour milk into the pan.
After the ingredients come to a boil, strain the tea and enjoy.
