A traditional Maharashtrian breakfast recipe, kanda poha is made with flattened rice, onions, and peanuts. Light, flavorful, and easy to cook, the perfect start to your morning.
1½ cups thick poha 2 tbsp oil ½ tsp mustard seeds 1 finely chopped onion 2 chopped green chillies ¼ tsp turmeric powder Salt to taste 2 tbsp roasted peanuts Fresh coriander and lemon juice for garnish
Rinse poha gently in water and drain completely; keep aside.
Heat oil, add mustard seeds, and let them splutter.
Add onion, green chilli, and sauté till translucent.
Add turmeric, salt, and poha; mix well and cook on a low flame for 2-3 minutes.
Garnish with roasted peanuts, coriander, and lemon juice, and serve hot.
