Creamy and comforting, this pumpkin sauce pasta blends roasted pumpkin, garlic, and cheese for a rich, velvety meal. Perfect for cosy dinners, it’s flavourful and irresistibly smooth with every bite.
200 g pasta (penne, fusilli, or spaghetti) 1 cup pumpkin puree 1 tbsp olive oil 3-4 finely chopped garlic cloves ½ cup fresh cream ¼ cup grated cheese (parmesan or cheddar) ½ tsp chilli flakes ½ tsp black pepper powder Salt to taste Fresh basil or parsley for garnish
Cook pasta in salted water until al dente, drain, and reserve a little pasta water.
Heat the butter in a pan, add the minced garlic, and sauté until aromatic.
Add pumpkin puree, milk, salt, pepper, and chilli flakes, then stir and simmer for 2-3 minutes until the sauce turns creamy and fragrant.
Add cheese and pasta, stirring gently until the sauce coats evenly, adding a splash of pasta water if needed for a smooth, creamy texture.
Garnish with basil or parsley and serve hot with extra cheese on top.
