Loaded Thepla Recipe: Wholesome Gujarati Flatbread With A Twist

Loaded thepla is a hearty variation of the classic Gujarati flatbread, made with whole wheat flour, spices, and the addition of grated vegetables or greens for extra flavour and nutrition. It works well for breakfast, travel snacks, or as part of a lunchbox.

Ingredients

1 cup whole wheat flour ¼ cup gram flour (besan) ½ cup grated lauki, carrot, or spinach (or a mix) 1–2 green chillies (finely chopped) 1 tsp ginger paste ½ tsp turmeric ½ tsp red chilli powder ½ tsp cumin powder Salt to taste 1 tbsp oil Water as needed Oil for cooking

Step 1

In a mixing bowl, combine whole wheat flour, gram flour, grated vegetables, green chillies, ginger paste, and all spices with salt.

Step 2

Add oil and mix well, then slowly add water to knead into a soft dough.

Step 3

Divide the dough into equal portions and roll each into a thin disc.

Step 4

Heat a tawa and cook each thepla on both sides, brushing lightly with oil until golden spots appear.

Step 5

Serve warm with curd or pickle.
