Litti chokha is Bihar’s earthy, rustic comfort food, roasted wheat balls stuffed with spiced sattu and served with smoky mashed chokha. It’s wholesome, smoky, and truly desi!
For Litti: 2 cups whole wheat flour 1 cup sattu (roasted gram flour) 2 tbsp mustard oil 1 tsp ajwain Salt, lemon juice, green chilli, and coriander to taste For Chokha: 2 eggplants, 2 tomatoes, 2 boiled potatoes 2 tbsp mustard oil 1 onion, chopped Salt, green chilli, lemon juice, and coriander to taste
Mix wheat flour with salt and oil; knead into a dough.
Combine sattu, mustard oil, and spices for stuffing.
Shape small dough balls, fill with sattu mix, and seal well.
Roast over charcoal or bake at 200°C until browned.
For chokha, mash roasted eggplant, tomato, and potato with spices and oil; serve hot with litti.
