South Indian lemon rice is a comfort food on a regular day, but when you are sick, it is the most lightweight and delicious dish you can indulge in. Prepared with leftover rice, here is a quick guide to make it at home.
2 tbsp oil 2 tbsp lemon juice 1.5 cups cooked rice ½ tsp salt ½ tsp turmeric powder 1.5 tsp chana dal 7-8 curry leaves A pinch of hing 1 tsp urad dal 2 slit green chillies 2 tbsp peanuts ¾ tsp mustard seeds 2 dried red chillies
Heat oil in a pan and saute mustard seeds, curry leaves, and turmeric powder.
Add chana dal and urad dal in the kadhai and saute them with peanuts and green chillies.
Add cooked rice and stir it, so it turns yellow.
Turn down the flame and add lemon juice.
Cover the rice with a lid and let it cook for 5 minutes.
Enjoy hot lemon rice.
