Do your parathas turn into papad? Well! There is something that you are not doing right. From kneading the dough to how you roast the flatbread, every step is crucial in achieving the right texture.
When you knead the dough, use lukewarm water. It will help the gluten to develop easily. Ensure you knead it for at least 5-10 minutes.
After kneading, cover the dough with a damp cloth and leave it aside for 20-30 minutes. It will contribute to the softness of paratha.
When kneading the dough, you should add a small amount of fat. Add a dollop of ghee to make the atta soft. It will be easier to roll too.
Don’t roll a thin layer of paratha, it will be crispy. Keep the thickness medium, a little more than what you keep for roti.
Cook your paratha on a medium flame, not low or high. Either way, you will end up overcooking it. Cook until both sides are brown.
When roasting a paratha, use oil and ghee on the top for even cooking. It will keep the paratha soft.
Once the parathas are ready, keep stacking them one on top of the other. Cover the casserole with a lid and keep it aside.
