Palak paneer is another North Indian delight that is cherished and relished with rice and roti throughout the year. Rich in iron and boasting a creamy base, this is a healthy gravy that can leave anyone licking their fingers. Check out the recipe.
250 g spinach 1 tomato, onion 1 tsp cumin, chilli powder 2 tsp coriander powder 1 tsp amchur, turmeric powder 2 dry red, green chillies Salt, pepper to taste 2 tbsp fresh cream 200 g fresh paneer
Blanch spinach leaves and blitz them into a smooth paste with ice.
Blend onion, green chillies, and tomato in another jar.
To a pan of hot oil, add cumin seeds and turmeric powder. Pour tomato-onion paste into it.
Sauté until the paste starts gathering. Add spices and a splash of water. Cook until the spices release oil.
Add spinach paste to the blend and cook for 10-15 minutes. Add fresh cream and paneer and cook for another 5 minutes.
Season the gravy and temper it with red chillies and cumin seeds. Serve with rice and roti.
