Thecha is a side condiment served in Maharashtra. It is among the most popular side dishes you will find across restaurants in the state. While peanuts are quintessential to its recipe, you can make the dish with them, especially if you are allergic or don’t like their nutty aroma.
10-12 green chillies 6-8 garlic cloves 20 grams of coriander leaves Salt to taste 1 tsp cumin seeds
Heat an iron griddle because you will dry the roasting ingredients.
Add roughly chopped chillies to the pan and cook them until their skin is slightly charred.
Add garlic at this stage and wait for them to release aroma and get slightly burnt.
Drop in coriander leaves with stems and toads until they are soft.
Transfer the ingredients into a mortar and pestle. Sprinkle salt.
Pound the ingredients until you have a coarse paste and enjoy.
