Light, refreshing, and loaded with vitamin C, Lemon Coriander Soup is the ideal comfort bowl for cold evenings or detoxing days. The citrusy tang, earthy coriander fragrance, and delicate warmth make it perfect for boosting immunity and calming the body after heavy meals.
1 tbsp oil 1 tsp ginger-garlic (chopped) 1 small onion (finely chopped) 4 cups vegetable stock 2 tbsp lemon juice 3 tbsp coriander (chopped) Half a spoon of pepper Salt to taste
In a pan, heat 1 tbsp oil in a pan and add 1 tsp of chopped ginger-garlic and saute it for about a minute until it turns aromatic.
Add 1 small onion, finely chopped, and sauté until it turns translucent.
In a vessel, pour 4 cups of vegetable stock and stir it well. Let it boil for about 5–6 minutes on medium flame.
Add some salt and black pepper powder as per taste. Stir it occasionally to combine the flavours.
Mix 2 tablespoons of fresh lemon juice and let it boil for another 2–3 minutes to get a tangy balance.
Add 3 tablespoons of finely chopped coriander leaves and cook for 1 minute to blend freshness as well as aroma.
Serve it hot and garnish with some extra coriander and some lemon slices.
