This lemon coriander soup has a bright, refreshing flavour and feels gentle on the stomach. It works well as a starter or a simple light meal when you want something warm and soothing.
2 cups vegetable stock 1 tbsp chopped garlic ½ cup chopped vegetables (carrot, cabbage, capsicum) 2 tbsp chopped coriander 1 tbsp lemon juice Salt and pepper
Sauté garlic in a little oil until it becomes fragrant.
Add chopped vegetables and cook briefly without letting them brown.
Pour in the stock, season and simmer until the vegetables soften slightly.
Stir in coriander and lemon juice just before serving.
