Lemon coriander soup is a comforting, tangy, and aromatic soup made with vegetable stock, fresh coriander, and a squeeze of lemon juice. It is soothing and light, often enjoyed during a change of season or when you want something warm and healthy.
4 cups vegetable stock or water 2 tbsp fresh coriander (finely chopped) 1 green chilli (slit, optional) 1 tbsp cornflour mixed with 2 tbsp water (for thickness) Juice of 1 lemon 1 tsp ginger (grated) 1 clove garlic (minced) 1 tsp oil or butter Salt to taste Black pepper to taste
Heat oil or butter in a pan. Add ginger, garlic, and green chilli, sauté for 1 minute.
Pour in vegetable stock and bring it to a boil. Add cornflour slurry and stir until slightly thickened.
Turn off the flame, add fresh coriander and lemon juice. Mix well and serve hot with pepper sprinkled on top.
