Leftover Rice Dosa: South Indian Staple Meets Cooking Experiments

Got leftover rice in the refrigerator? You can turn them into a whole new dish, and no one will ever recognise the star ingredient in the recipe. From making cutlets to pakoras, take a look at how you use the grains to create South Indian staple dosa.

Ingredients

1 cup leftover rice 1 cup rava 6 tbsp curd Salt to taste 1 tsp cumin seeds Oil as needed

Step 1

Blend leftover rice with cumin seeds and water.

Step 2

Combine the blend with rava and curd.

Step 3

Pour more water into the mixture to adjust the consistency.

Step 4

Spread a ladle of this batter on a hot griddle.

Step 5

Spread oil on the edges and at the centre.

Step 6

Once the base is crispy, serve the dosa with chutney.
