Thin, lacy crepes—much like pancakes—are extremely adaptable in terms of making into sweet or savoury, as per preference. Enjoy them with savoury fillings for breakfast or with sweet additions as a post-meal dessert treat.
½ cup milk 2 large eggs ½ cup water 1 cup all-purpose flour 1 pinch salt 2 tablespoons melted butter
Combine the milk, water and eggs in a jug to whisk thoroughly before pouring into a bowl with the flour and salt.
Whisk the mixture to combine into a thin, lump-free batter and add in the melted butter.
Rest for 10 minutes before ladling into a flat frying pan and cooking for 2 minutes per side.
Serve with a drizzle of honey and nuts; alternatively, serve with sauteed mushrooms, ham and cheese.
