Lauki, or bottle gourd, is a nutritious vegetable that surprisingly makes a great dessert. Combining the natural sweetness of lauki with ghee, nuts, milk, and sugar, this halwa is a must-try for sweet tooths.
2 cups grated lauki ¼ cup ghee 2 tablespoons chopped cashews 2 tablespoons chopped almonds 2 tablespoons raisins ½ cup milk ¾ cup sugar ¼ teaspoon cardamom powder
Rinse, peel, and grate a lauki. Take a pan on low heat and let some milk simmer till it thickens.
In another pan, heat ghee and fry cashew nuts, almonds, and raisins. Set them aside.
Add grated lauki to hot ghee and keep stirring till the shreds shrink.
Once the lauki is cooked, add simmered milk, sugar, and cardamom powder.
Stir for about 15-20 minutes till the volume decreases. Add fried nuts and mix well.
Serve it warm or chilled as per your preference.
