A comforting bowl of lasooni palak with steaming rice is perfect for winters. It is a spinach-based curry with a strong garlic flavour. Follow this recipe to make lasooni palak every winter morning.
3 cups of water 500 grams of spinach leaves 3 cups of cold water A few chopped gingers 4-5 cloves of garlic 3 green chillies 1 teaspoon red chilli powder 1 teaspoon of cumin seeds 1 tablespoon of coriander powder ½ teaspoon garam masala 1 teaspoon cumin powder 1 tablespoon of ghee Salt to taste
In a pot, add water. Put in the spinach leaves. Bring it to a boil. Transfer into cold water immediately.
Take a kadai, heat up the oil. Add the cumin seeds. Let it turn dark.
Add the chopped garlic. Cook for 2-3 minutes. Add in the chopped onions and cook for 5-6 minutes.
Put in the green chillies, cumin powder, garam masala, coriander powder and red chilli powder. Sauté for 2 minutes.
Add the gram flour/besan. Mix it well. Pour the water into the pan. Bring it to a boil.
Add in the spinach leaves. Cover the pan with the lid. Let it cook on medium flame for 2-5 minutes.
Temper the oil, cumin seeds, garlic and ghee in a small pan. Pour tadka on top of the palak curry. Serve lasooni palak with rice, roti or naan.
