Lapsi is a deeply comforting, traditional Gujarati sweet made from cracked wheat (broken wheat) roasted in pure ghee and simmered with organic jaggery. Scented with warm cardamom and studded with toasted nuts, this wholesome dessert is a staple offering for auspicious festive celebrations and family gatherings.

Ingredients

1 cup cracked wheat (lapsi / broken wheat) 1/3 cup pure ghee 3/4 cup organic jaggery powder 2.5 cups hot water 1/2 teaspoon cardamom powder 2 tablespoons mixed chopped almonds, cashews, and raisins

Step 1

Heat pure ghee in a heavy-bottomed pan and lightly roast the chopped nuts until golden, then remove and set aside.

Step 2

Add the cracked wheat to the remaining ghee in the pan, roasting continuously on medium-low heat for ten to twelve minutes until golden brown and deeply aromatic.

Step 3

Carefully pour the hot water into the roasted cracked wheat, cover the pan, and simmer on low heat for twelve to fifteen minutes until the wheat absorbs the water and softens completely.

Step 4

Stir in the organic jaggery powder, cardamom powder, and toasted nuts, cooking for another three minutes until the jaggery dissolves fully and the lapsi achieves a rich, glossy finish.
