Kuttu or buckwheat flour is one of the most typically used ingredients during Sawan fasting. Turn it into soft, tasty parathas that can be paired well with curd or vrat-friendly aloo sabzi, making a simple, wholesome meal.

Ingredients

2 cups kuttu (buckwheat) flour 2 medium boiled potatoes, mashed 2 green chillies, finely chopped 2 tablespoons chopped coriander 1 teaspoon cumin seeds ½ teaspoon sendha namak (rock salt) 2 tablespoons ghee Water, as needed

Step 1

In a bowl, mix kuttu flour, mashed potatoes, green chillies, coriander, cumin and rock salt. Knead everything to make a soft dough.

Step 2

Divide the dough into equal parts. Dust it lightly with dry kuttu flour and roll each part to make a medium-sized paratha.

Step 3

Heat a tawa and put the rolled paratha onto it. Cook until you see light brown spots, then flip and cook from the other side.

Step 4

Cook the paratha until both sides turn golden, the edges turn crisp, while staying soft and easy to fold.

Step 5

Serve hot with vrat wali aloo ki sabzi or plain curd for a filling lunch or dinner.
