Kumaoni raita is a distinct, flavourful twist on the standard yogurt side dish. Originating from the Uttarakhand region, it is uniquely enhanced with the earthy intensity of mustard seeds and fresh turmeric, which gives it a vibrant yellow hue. The result is a sharp, pungent, and deeply satisfying accompaniment that perfectly cuts through the richness of hearty, slow-cooked meals.
1 cup thick curd, well whisked  1/2 cup grated cucumber  1 tsp mustard seeds, finely ground  1/2 tsp fresh turmeric, grated (or a pinch of powder)  A pinch of red chilli powder and salt to taste
Place the whisked curd in a bowl and fold in the grated cucumber.
Add the ground mustard seeds and fresh turmeric, stirring thoroughly to ensure the mustard is well integrated.
Season with salt and a touch of red chilli powder.
Allow the raita to chill in the refrigerator for at least an hour; the resting time is essential to allow the mustard to mellow and the flavours to develop their characteristic kick.
