Kolkata-style egg roll is one of the iconic street food items that carries the essence of this city. It is known for a signature flaky, pan-fried ‘lachcha porota’ wrap layered with a freshly made egg omelette, mashed potato, sliced onions, cucumbers, green chillies, all drizzled with tangy sauces.
Being the maida wrap that holds the entire roll, it is traditionally made by kneading the dough and then rolling it in a layered manner to create the flaky texture.
To create the egg layer, a beaten egg is released onto the hot tawa. The porota is then placed directly on top and fried together for some time.
The mashed potato core is essentially paired with some freshly sliced onions and cucumbers. It is often seasoned with some chaat masala and lime juice.
To end it, the egg roll is often drizzled with some tomato ketchup and green chilli sauce. However, one may use Kasundi (mustard sauce) as well.
