Protein-forward, savoury and texturally diverse—the egg roll is a classic tea time bite that is complete in every way due to its composition. Replicate the recipe at home using leftover rotis or parathas, or opt for the store-bought ones to get a taste of the streetside snack within the comfort of home.
2 eggs 1 roti/paratha 1 tablespoon oil/butter ½ onion, sliced 1 tablespoon green chutney 1 tablespoon ketchup ¼ carrot, sliced thinly 1 green chilli, chopped 1 slice cheese (optional) Salt, to taste
Warm up the roti or paratha on a tava and set aside while the eggs are whisked in a bowl with some salt.
Heat the oil or butter in the same tava before adding the green chillies to the egg mixture and pouring it.
Spread it thinly to form an omelette and place the warm roti or paratha over the uncooked surface.
Cook for two minutes before flipping it over and cooking it over high flame for the flatbread to crisp slightly.
Transfer to a plate and slather with ketchup and green chutney, followed by the sliced onions and carrots.
Roll it into a compact cylindrical form before serving hot.
