Kolhapuri misal pav is a bold, spicy, and deeply flavourful Maharashtrian dish made from sprouted moth beans (matki), topped with crunchy farsan, onions, and a zesty tarri (spiced gravy). Served with soft pav, it is a must-try for spice lovers!
For Usal: 1 cup sprouted matki 1 tbsp oil 1 tsp mustard seeds Pinch hing 1 tsp ginger-garlic paste 1 chopped onion 1 chopped tomato ½ tsp turmeric 1 tsp red chilli powder Salt to taste 1½ cups water For Tarri: 2 tbsp oil 1 tsp cumin seeds 1 sliced onion 2 tbsp grated dry coconut 1 tsp Kolhapuri masala 1 cup water Toppings & Sides: Farsan/sev, onion, coriander Lemon wedges, buttered pav
Heat oil, crackle mustard seeds, add hing, ginger-garlic paste, add onions, tomatoes and then sauté.
Add turmeric, chilli powder, salt, sprouted matki and cook with water until soft.
Heat oil, sauté cumin, sliced onions, dry coconut till golden, then add masala and water, boil well for a rich flavour.
In a bowl, add usal, pour tarri over it, top with farsan, chopped onion, and coriander.
Pair with pav, lemon wedges on the side.
