Khoya Kheer transforms simple ingredients into a luxurious dessert. Prepared with milk, khoya, and some sugar, it is a delight which is both comforting as well as celebratory, bringing the essence of traditional feasts to every spoon.
1 litre of full-fat milk ½ cup grated khoya ¼ cup sugar (adjust to taste) 2 tablespoons basmati rice ¼ teaspoon cardamom powder 2 tablespoons chopped nuts 1 tablespoon raisins A few saffron strands 1 teaspoon ghee
In a heavy pan, boil one litre of full-fat milk on low heat until it gets a slightly thick consistency.
Add half a cup of grated khoya and stir it until it fully dissolves and gets a creamy consistency.
Mix ¼ cup of sugar and 1 tablespoon of cardamom powder to make it aromatic.
Stir it occasionally to prevent it from sticking. Cook it until the kheer gets a rich, smooth consistency.
Add some chopped almonds, cashews, and pistachios to add the crunch to the consistency.
To add more depth and colour to the kheer, stir a few saffron strands soaked in warm milk.
Serve it warm or chilled and garnished with some nuts or rose petals.
