Khao suey is a comforting Burmese noodle dish cooked in a creamy coconut curry and topped with crunchy garnishes. It’s aromatic, filling, and easy to prepare at home.
200 g noodles (egg or rice noodles) 1 cup boiled chicken or vegetables 1 onion (chopped) 1 tbsp curry powder 1 cup coconut milk 1 tbsp oil Salt to taste Toppings: fried garlic, spring onions, lemon wedges
Boil the noodles until soft, then drain and keep aside.
Heat oil in a pan, sauté onion, and add curry powder.
Stir in chicken or vegetables with coconut milk and salt, and cook until thick and fragrant.
Pour the curry over noodles, garnish with toppings, and serve hot.
