Khaman is a light and spongy steamed snack made with gram flour and tempered with mustard seeds, green chillies, and curry leaves. It is tangy, mildly sweet, and served with chutney for breakfast or as a tea-time snack.
1 cup gram flour (besan) 1 tbsp semolina (rava/sooji) 1 tsp ginger-green chilli paste 1 tsp lemon juice 1 tsp sugar ½ tsp turmeric powder 1 tsp ENO fruit salt Salt to taste ¾ cup water For tempering: 1 tbsp oil, 1 tsp mustard seeds, 2 green chillies, a few curry leaves, 1 tsp sesame seeds
Whisk besan, semolina, ginger-chilli paste, turmeric, sugar, lemon juice, salt, and water into a smooth batter.
Just before steaming, mix in ENO and pour batter into a greased tray. Steam for 15–20 minutes until spongy.
Heat oil, add mustard seeds, curry leaves, chillies, sesame, and pour over steamed khaman. Cut into squares and serve.
