Khagina is a spicy and flavourful scrambled egg recipe from Pakistani cuisine, similar to scrambled eggs. It is made with eggs, onions, tomatoes, chillies, and spices, making it perfect for breakfast.
4 eggs 1 finely chopped onion 1 finely chopped tomato 1–2 finely chopped green chillies 2 tbsp chopped coriander leaves ¼ tsp turmeric powder ½ tsp red chilli powder (adjust to taste) ½ tsp cumin seeds (optional) Salt to taste 2 tbsp oil or ghee
Heat oil in a pan, add cumin seeds, then saute chopped onions until soft and lightly golden.
Add tomatoes, green chillies and cook until tomatoes become soft.
Sprinkle turmeric, chilli powder, salt, mix well and cook for a minute.
Beat eggs and pour them into a pan, stir continuously to scramble the eggs until they’re fully cooked but still soft
Garnish with coriander leaves and serve hot with paratha or bread.
